Composition: white sugar, non-tempered lauric type cocoa butter substitute (hydrogenated palm kernel oil fraction, emulsifiers: sorbitan tristearate (E492), lecithin (E322)), cocoa powder, dry milk whey, emulsifier lecithin (E322), vanillin flavoring
Characteristics/description of raw materials: Chocolate glaze on lauric fats in discs (coins) with a diameter of 2-2.5 cm, cocoa content not less than 11%, taste and aroma of chocolate and vanilla.
Application area: Shokomilk confectionery glaze is used for glazing cookies, waffles, cakes, rolls, marshmallows, sweets and other products. Also used for making chocolate figurines, chocolate bars, ganache, candy filling. The glaze does not require tempering; it melts quickly in a water bath or in the microwave in short pulses.
Technological recommendations: Recommendations for use: Melt the glaze in a container with a water jacket to a glaze temperature of 40-45 0C with constant stirring (water temperature in a water jacket is not more than 65 0C)
Note: When switching to other types of glaze, a thorough cleaning of the equipment is required; it is not allowed to dilute the glaze with non-lauric fats, in order to avoid bad hardening and thinning.
