Characteristics/description of raw materials: Homogeneous, moderately dense mass that does not spread on a horizontal surface. Slightly brittle, crumbling is allowed. The taste and smell are clean, fermented milk, typical of curd cheese. Color from white to light cream, uniform throughout the mass.
Preparation of raw: Ready-to-use curd cheese is placed in clean, dry, labeled containers with tight-fitting lids. Moving semi-finished products in open containers and without marking during production is prohibited.
