Characteristics/description of raw materials: Slices of pomelo peel in the form of crescents, boiled in sugar syrup, dried and lightly sprinkled with powdered sugar, uniform in shape and size. When compressed, they do not stick together. Easily removable slight clumping is acceptable.
The color is uniform, ranging from light green at the pulp to dark green at the rind.
The taste is sweet and sour, with a slight astringency and bitterness. Unsaturated aroma. Extraneous taste and smell are not allowed.
The texture is firm, tough at the rind, while softer on the pulp side; without protruding drops of moisture and crumpled sugar crystals on the surface.
The slices are evenly cooked, it is difficult to cut, bite and chew.
Preparation of raw: Candied fruits are placed in clean, dry, labeled containers with tight-fitting lids. Moving in the production of candied fruit in open containers and without marking is prohibited.
