Characteristics/description of raw materials: Concentrated premium emulsifier for biscuits, rolls, muffins. Increases volume, improves structure and prolongs freshness. It can be used in puff pastry and dumplings.
Application area: Designed for the production of semi-finished biscuits, rolls, muffins and cookies.
Preparation of raw: The raw materials received for production are prepared in accordance with the technological instructions and the "Instructions for the prevention of foreign objects entering the product". Raw materials are unpacked after preliminary cleaning of containers from surface contamination and disinfected. After opening the container, the raw material is transferred to the in-house marked container.
Functional properties/benefits: Increases the shelf life, freshness of manufactured products. Increases volume. Allows to reduce the consumption of eggs by 20-25% and replace them with water, thereby achieving a significant reduction in the cost of 1 kg of biscuit dough for raw materials.
Shelf life, storage and transportation conditions: At a temperature not higher than 15 ℃ (not lower than 0 ℃) and a relative humidity of not more than 65%. After opening the package, store at a temperature of 0 to 4 ℃.
