Magimix White Label Improver contains enzymes that break down amylose into dextrins, thereby slowing down the process of unwinding and combining molecules. Also, the monoglycerides included in the improver are included in the helix of the amylose molecule, preventing its unwinding.
Thus, the double action of the improver (monoglycerides + enzymes) helps to extend the freshness up to 2 months.
Technological recommendations: Add Magimix White Label Improver directly to the flour and mix.
It is a complementary additive, does not affect the change and shape stability of the volume of bread.
Sharing with other improvers is possible.
Dosage: 1-3% by weight of flour or (or 1.0 - 3.0 kg per 100 kg of flour), depending on the desired shelf life and product weight.
For small-piece products, a dosage of 2-3% is recommended.
With a storage period of more than 2 months, the dosage of the improver can be increased up to 4-6%.
