Composition: Sugar, dextrose, thickener E1414, yoghurt powder (normalized milk, yoghurt starter), gelatin, acidity regulator citric acid, food flavor Yoghurt, food salt.
Characteristics/description of raw materials: Dry mix "ZIISAN Yoghurt" is intended for confectionery products containing soufflé or mousse tapa fillings, creamy masses with or without additives. The semi-finished product has a quick solubility in an aqueous, fruit and berry solution, a small dosage and a minimum of operations for a stable creamy mass.
Functional properties/benefits: Keeps the stability of the cream when cut; stability of the cream during freezing and subsequent defrosting; gives the finished cream a natural and balanced taste, color and pleasant aroma; differs in good stabilization, thanks to the content of gelatin; helps to increase the shelf life of finished products.
Technological recommendations: Mix the mixture with water at room temperature. Combine the resulting mass with cream and mix thoroughly until a homogeneous consistency. Keep the product in the refrigerator for at least 1 hour to stabilize. Dosage: for 200 g of the mixture - 250-400 g of water, 1000 g of half-whipped or whipped cream.
Shelf life, storage and transportation conditions: Storage conditions: store in a cool dry place at a temperature not exceeding +2‒5 ℃ and relative air humidity not more than 75%.
