Preparation of raw: add directly to flour and stir
Functional properties/benefits: Improves gas retention capacity (contains a high-quality emulsifier that combines lipids with gluten proteins);
Avoids the appearance of dark-colored bubbles on the surface;
Provides good dimensional stability of the dough pieces during the final proofing;
Provides better elasticity of the dough due to the combination of an emulsifier and an oxidizing agent (ascorbic acid), which promotes the opening of the "scallop" on products such as baguette and city roll;
Significantly increases volume;
Provides a homogeneous, thin-walled crumb;
Gives a pronounced taste and aroma to baked products;
Prolongs the freshness of the finished product.
Technological recommendations: 0.2-0.5% of the flour mass or 200-500 grams per 100 kg of flour, depending on the method of dough making: 0.1-0.3% for the sponge method, it is recommended to reduce the dosage to the quality of flour. The weaker the gluten (IDC over 80 units), the higher the dosage should be used. 0.7% when combined with the use of "Magimix" with the gold label "Sdoba" to the mass of flour.
