Technological recommendations: The dissolution of the product depends on the medium and the technological process: it improves with heat treatment (time, temperature), depends on the shear stress (mixer, homogenizer). Complete dissolution can be quickly obtained at 80/8‒5℃. Dissolution may be poor in environments with a high content of calcium ions (hard water, > 80mg/kg Ca++, milk), then additional time for dissolution or "complex salts - sequestrants" is needed.
For dissolving without lumping:
Pre-mix the powder with other dry ingredients, then pour the mixture into the liquid while stirring continuously. Continue stirring until the mixture is completely mixed.
The product can be used in the aquatic environment.
The gelation process due to the interaction of pectin with calcium ions takes place during cooling.
The final structure is obtained after 24 hours.
