Characteristics/description of raw materials: Saf-Instant® Gold Label Dry Instant Yeast is a special osmotolerant yeast ideal for high sugar formulations.
Application area: Saf-Instant® dry instant yeast with a gold label is recommended for the manufacture of bakery products with a sugar content of 10% by weight of flour. It can be used for the preparation of frozen semi-finished products with short shelf life.
Preparation of raw: It is delivered to the enterprise in vacuum bags from a multilayer film of 500 g, transported in a corrugated box of 20 pcs. Raw materials are prepared in a separate room (preparatory department), where raw materials are unpacked from recycled containers. After that, the vacuum packages are sent to the warehouse for further storage.
Functional properties/benefits: Due to the low content of the enzyme invertase compared to the normal strain, the consumption of sugar by the yeast is slow and gradual. Therefore, in a dough containing a large amount of sugar, the yeast cell maintains a stable metabolism and its enzymatic ability is not disturbed. The increased content of trehalose and glycerol compensates for the high osmotic pressure - the main cause of yeast cell death.

Technological recommendations: Depending on the sugar content, flour quality, recipe, dough method and production conditions:
0.4 -3.0% by weight of flour;
0.4-0.5% sponge dough method in the manufacture of breads with a sugar content of 5-8%;
0.6-1.5% unpaired method of dough making for the manufacture of bakery products with a sugar content of 10-15%;
1.5-3.0% for the manufacture of products with sugar content from 20%, as well as for the manufacture of frozen semi-finished products.
Mode of application:
Mix Saf-Instant® Gold Labeled Dry Instant Yeast with flour before kneading or add to dough at the beginning of kneading. Avoid direct contact of Saf-Instant® Gold Label Dry Instant Yeast with cold water or ice. It is possible to pre-dissolve the Saf-Instant® dry instant yeast with a gold label in warm water (35 -38 ℃) with a short mixing time. This operation is especially good for making baked goods with a sugar content of more than 20% (Easter cakes and high-recipe buns) and is necessary when using slow TMM.
Shelf life, storage and transportation conditions: 2 years in a cool dry place at temperatures up to +25 ℃. After opening the package, yeast must be used within 48 hours. or store in the refrigerator for up to 2 weeks in a tightly closed container.
