Functional properties/benefits: Improver Magimix® "Soft Sandwich Brad" is a complex improver aimed at solving several problems at once:
a professionally selected complex of enzymes contributes to obtaining maximum softness of products and extending it unchanged for at least 7 days;
the emulsifier included in the improver provides a uniform, finely porous crumb structure;
ascorbic acid has a strengthening effect on flour gluten, which helps to improve gas-holding capacity, dimensional stability and, as a result, to obtain a large volume of products;
L-cysteine, which has a restorative effect, contributes to the faster formation of the gluten framework, which leads to the preservation of the aroma of bread. Also, this ingredient provides a smooth surface of the product;
