Characteristics/description of raw materials: Complex improver for bakery products made from wheat and mixed flour.
Appearance: fine powder.
Color: from white to beige, a gray tint is allowed.
Taste, smell: peculiar to the ingredients of the mixture, without outsiders.
Physical and chemical indicators:
Mass fraction of moisture: no more than 15%.
Mass fraction of metal impurities with the size of individual particles in the largest linear dimension of 0.3 mm and (or) weighing no more than 0.4 mg: no more than 3 mg per 1 kg.
Extraneous mineral impurities: not allowed.
Infestation and contamination by pests of grain stocks (insects, mites): not allowed.
Application area: Designed for bread, loaves, rich products, yeast puff products. Suitable for products with rye flour content up to 40-50%. Suitable for freezing fully baked products and "Express" partial pastries.
Functional properties/benefits: It gives products a large volume, a developed structure of the crumb, significantly prolongs the freshness and softness of finished products.
Technological recommendations: 0.3-1.0% by weight of flour. It is added directly to the flour before the dough preparation process.
0.3-0.4% - to correct the volume and shape of products, to reduce the crumbling of the crumb;
0.5-0.7% - to increase the volume of products, obtain an extra-soft crumb and prolong freshness during storage;
0.8-1.0% - for rich and puff products; for a significant increase in volume, obtaining a juicy crumb and maintaining the original softness throughout the entire shelf life.
0.5-1.0% - for frozen products.
1% by weight of flour is the recommended dosage in the manufacture of donuts.
Shelf life, storage and transportation conditions: Shelf life is 9 months in clean, dry rooms, not infested with pests of grain stocks and protected from direct sunlight at a temperature not higher than 20℃ and relative humidity not more than 70%.
