Functional properties/benefits: The Unicons preservative is intended for a significant increase in the shelf life (by 3-6 times) of food products in the processing industry.
Dietary supplement Unikons exhibits antimicrobial activity against a wide range of gram-positive and gram-negative bacteria, especially anaerobes (reproducing without air access). It has high antifungal, antiviral activity.
The main feature of the Unicons preservative is its ability to act in a protein environment, which, as you know, is ideal for the reproduction of microorganisms.
Another feature of Unicons is its high efficiency, which does not depend on the acid-base environment (pH level).
Technological recommendations: Cream Preservative / Filling Preservative: Unicons is added during the initial stages of cream or filling production through the aqueous phase. (0.5-1.0 ml/kg).
Recommendations: usually the additive is applied before thorough mixing of all the components of the cream. If the cream contains water, or is added during its manufacture, then it is best to dissolve Unicons in water.
Preservative for finished cakes: "Unicons" is brought together with impregnation. Bookmark rate 0.5 ml / l of impregnation.
NOTE. Since Unicons is stable up to a temperature of 180 C, it is not advisable to add it to the dough. For baking, Unicons TK-12 (concentrate) is more suitable, which is added when kneading the dough.
