Characteristics/description of raw materials: Pectin type APA104 ("André Pectin") is a purified high esterified pectin of a slow cage, extracted from apple pomace and standardized with sucrose.
Appearance: free flowing powder.
Colour: light yellow powder.
Smell: insignificant, without extraneous notes.
Taste: weak, without foreign aftertaste.

Technological recommendations: Recommended dosage.
Jams, jellies 0.4 - 1%.
Confectionery 0.8 - 2.2%.
We recommend dissolving the pectin in water before adding it to the final product.
