Appearance: Homogeneous fine powder.
Taste, smell: Neutral.
Color: White or nearly white.

Functional properties/benefits: High viscosity, transparency, stability at low temperatures and in freeze / thaw cycles, resistance to high temperatures, mechanical stress and low pH values.

Technological recommendations: The recommended dosage is 0-4% depending on the recipe. The dosage of starch is determined experimentally.
