Characteristics/description of raw materials: Appearance and consistency: a homogeneous product without impurities, without shell residues, films, solid in a frozen state, liquid in a chilled and defrosted state, while the yolk is thicker than the protein.
Color: yellow to orange.
Smell and taste: typical of egg products, no extraneous.
Preparation of raw: Before unpacking, the packages with egg melange are disinfected in 2% Nika-2 solution for 10-15 minutes and then rinsed with running water at t = 40‒45 ℃ until the disinfector is completely washed off. Then the melange is filtered through a sieve with cells of no more than 3 mm and placed in clean, dry, labeled containers with tight-fitting lids. Moving mélange in open containers and without marking is prohibited.
