Composition: Drinking water, emulsifiers (sorbitol syrup E420ii, mono- and diglycerides of fatty acids E475), humectant (propylene glycol E1520).
Characteristics/description of raw materials: Creamy white or light beige paste emulsifier. Improves the structure and volume of the biscuit, and also provides an extension of the shelf life. Holds impregnation for biscuits.
Application area: It is used in the production of flour confectionery products: biscuits, muffins, rolls, waffles, muffins, etc.
Preparation of raw: Emulsifier Denfay 11.01 is transferred to clean, dry, labeled containers with tight-fitting lids. Movement in the production of raw materials in open containers and without labeling is strictly prohibited.

Technological recommendations: Recommended dosage: 1-2% by weight of the dough - bakery products; up to 5% by weight of the egg, or 1-2% by weight of the dough - muffins, almond-nut cookies.
Place all ingredients (including flour) into a mixing bowl. Stir the contents of the container for 1-2 minutes. On slow speed and beat on high speed for 2-4 minutes. (depending on equipment). Pour the finished biscuit dough into molds or in a thin layer onto sheets (for the production of rolled biscuit).
Bake at normal temperatures. If necessary (if the dough is thick), it is possible to add an additional amount of water in the following proportions: from 3% to 7% by weight of the dough.
Shelf life, storage and transportation conditions: Stored in dry closed warehouses at a temperature of 5‒20 ℃ and relative air humidity of not more than 75% for 12 months in undamaged packaging.
It is allowed to increase the storage temperature to 30 ℃ for a period of not more than 2 hours.
After opening the package, it is recommended to tightly tie it. Under the recommended storage conditions, the shelf life after opening the original packaging remains unchanged.
