Characteristics/description of raw materials: Homogeneous, glossy, moderately thick mass. A slightly viscous consistency with a slight graininess is allowed. Slight separation of serum is allowed. The taste and smell are pure, fermented milk. Mild flavor of vegetable oils is allowed. The color is white or creamy, uniform throughout the mass.
Preparation of raw: Before unpacking, buckets with raw materials are disinfected in a 2% Nika-2 solution for 10-12 minutes, then thoroughly rinsed with water at a temperature of at least 40 ℃.
