Characteristics/description of raw materials: Appearance and consistency: homogeneous emulsion, moderately viscous, without clumped lumps of fat. Color: white or light cream uniform throughout the mass. Taste and smell: clean, odorless or with a smell caused by added additives (creamy vanilla). Without extraneous taste and smell.
Application area: The product is intended for the production of other food products at the food industry enterprises, in the catering network and for direct consumption in food, in particular for decorating and filling cakes, pastries, drinks, ice cream and other desserts.
Technological recommendations: The product is ready to use after whipping. Beat for 3-5 minutes, after cooling for at least 12 hours to a temperature of +4-8℃. Recommended whipping temperature +5℃. The finished cream can be stored in a closed container at a temperature of +5℃, the finished confectionery can be frozen. Cream UVT-processed, does not contain preservatives. When opening the package, sterility is violated, the product undergoes microbiological contamination, it is recommended that preservatives be added to finished creams with a shelf life of finished confectionery products more than 2 days.
